Then we make dinner out of it! Blanch 1 lb. brains in 4 cups boiling water, containing 2 Tablespoons salt and 2 Tablespoons until they turn whitish. Remove from pot and set aside to cool.
Slice brains into small cutlets (patties), discarding membrane, veins, and gristle. Salt & pepper, dip in beaten eggs, roll in bread crumbs, pressing in breading on both sides in 2 Tablespoons oil and 2 Tablespoons butter, then reduce heat and simmer a while longer. Serve with tartar sauce.

Well, yes, AskMe is about thinking small. It's made to provide simple answers to peoples' questions. If we thought big, the answer to most questions would just be "rethink your priorities. Your time would better be spent with your family or friends than on the issue about which you've posted". While eminently true, it isn't very useful, which is the core priority of AskMe.

This will work work with only one small brain.
Brain soup. To wash brain clear of blood, soak in cold water, renewing water several times. Skin and chop fine. Melt butter in pan, add brain, sprinkle with flour, and saute 10 minutes. Add beef stock (1 qt beef stock) and simmer 20 minutes. Just before serving, stir in 1 egg yolk and 1 cup of cream.

I read the recipe as using 2 tablespoons, you know, the spoons (must be silver, I'm sure) are boiled with the brains to help leech out any evil still resident in the aforementioned um, brain.

5 dl blood, 1 dl flower, 2,5 l buillion, 2-3 teaspoons of salt, 2-3 teaspoons of sugar, 1/2 dl vinegar, two tablespoons of cognjak, 2 dl of sherry, half a teaspoon of whiteppere, ginger and clovespice. Needs to be stirred/whipped the whole time so it doesn't get all full of lumps.
