How did the whole "Metafilter: X" thing get started?
The first comment at this post about the Arty Bollocks Generator is "Metafilter: Arty Bollocks Generator".
From this post, there are the comments "Metafilter: douched in irony.", "Metafilter: I was hoping at some point that we could talk about epistemology.", "Metafilter: I just have to smugly chime in." All of these quote something that was said a couple comments before.
So when did this get started? It's very recent but I don't think I saw the first one, so I'm curious.

I've seen this joke formulation on other websites and forums, going back quite a few years, so this may be one of those things MetaFilter absorbed that has its roots somewhere in Ancient Internet Lore.

It used to be that on the site there were rotating taglines under the "MetaFilter" logo, where it now just says "community weblog." People would humorously suggest new ones from especially pungent prose in the comments. None of these were ever adopted. The joke about the taglines has survived the death of the actual taglines and shows no signs of approaching death.

Yup. It's among the oldest of the old Metafilter injokes. It seems to wax and wane a bit but it's one of those things that's always been sort of burbling along, so this is just the Recency Illusion getting its tricky little claws into you.
Here's the most recent previous discussion of them, including fairly up-to-date lists for metafilter and metatalk comments, and another discussion from 2007.

Back in the day, the front page logo rotated between a few different versions, each with a different tagline.
There was 'The Plastic.com it's OK to like', 'More addictive than crack!' (I think) and at least one or two others I can't recall offhand.
People picked up on that and ran with it. In fact when I made the long dead 9622.net (before I had the faintest clue about design -- I'm a little embarrassed it's still there after all these years -- I can't remember who among the monkeys hosts it) -- I added a thingo where we could add in our own taglines, and it would automatically rotate between them as a kind of homage.

Ah, to be clear, it's not that it's hard to do a rotating slogan thing in general; I just mean that, given that we're not doing that server-side on mefi, a greasemonkey script or some such could provide it as amusing third-party functionality for anyone who longed for random sloganeering as part of their modern mefi experience.

It's just who was around at the time, and also Automatic Media was (for its brief flickering existence before collapsing under its own weight and taking Suck with it) sort of a Big Player, and Plastic was a sort of community forum experiment that unfortunately for AM was not beloved the way Suck was.
Keep in mind as well that ten years ago there wasn't nearly the sort of ubiquity of community websites and community-driven content aggregators that we know now; that sort of thing was basically brand new, and so you didn't really have the fine distinctions between specific style and format and philosophy of community of one site vs. another. You had your choice between, say, Memepool or Metafilter, depending on whether you wanted the links site without comments or the one with. Two sites doing roughly the same sort of thing at a superficial level made them similar, in that small pond, in a way we might not grant quite so easily today when niche communities are everywhere and Metafilter is the curmudgeonly old man on the porch instead of the clever new upstart.
And so, in 2000, scrappy but well-liked blogospheric underdog site Metafilter making a jokey comparison between itself and plastic.com, this actually-funded actually-professional product also in the "let's talk to each other on the internet" bucket, was sort of a natural bit of snark.
It's basically the 2000 version of mefites complaining about reddit and vice versa.

Sigh. Did you read it?
Back in the nineties, the British post-grunge band Bush was forced to print all of its Canadian releases under the name Bushx, because of the pre-existing (but short-lived and largely unknown) Canadian band called Bush.
It was joke.

This is soo wonderful of you to ask, really!
I was wondering the same thing because over the years
It seemed it would make a nice list
that does not seem to exist
... hoping I find it in this thread ....

Ah-- I didn't; it seemed like it was a joke that must have hinged on something that you needed to already know about the band, rather than something you needed to read 2 paragraphs to get. I wasn't primed for that type of timing, so when I asked what it meant, I thought I was asking what that thing that you would need to know was.
