Why would an "International" House of Pancakes hold a "National" Pancake Day? Why is it held exactly a week after Shrove Tuesday, the day known in the civilized nations the world over as "Pancake Day"?

I used to work third shift at a Steak n Shake. A couple of times a week when I would get off work I would walk next door to IHOP and have pancakes. That was twenty years ago. I still get nauseous from the smell of both places.
